Ideal drinking temperature: 13°-14°C
The vines in this plot are over 50 years old and yield a wine that is meaty and powerful, not without some similarity to fine wines of the Côte de Beaune.
A wine for laying down which age will smooth and make supple.
Excellent with fish, fruits de mer, and white meats.
OENOLOGIST’S TASTING NOTES
Eye: a handsome yellow revealing silvery highlights.
Nose: very fresh notes of hawthorn and white rose auguring a wine with long ageing potential. With time, aromas evolve notes of spice.
Taste: generous, elegant and highly-bred. It manages a balance between a powerful body and delicate final aromas of cinnamon and hazelnut.
Comment: geing potential and a subtle and distinguished balance, characteristic of soils of the Chablis district.
