he Domaine de la Tour is located
at Lignorelles, near Chablis. The
domaine's 13 hectares (32 acres) of vines
comprise a number of plots all located nearby
in the communes of Chablis, Courgis, and
Chitry.
The domaine is continuously improving its vinification
equipment, but always in a way which
balances scientific parameters with practical
know-how. The vines and their native soil are
at the heart of the domaine's philosophy, which
is continually seeking even fuller expression of
terroir while remaining attentive to the needs
of the vine and respectful of the environment.
"Since 2004" Renato points out, "we've modified
our pruning system in order to reduce
yields. All our decisions are guided by making
quality our first priority and by the pursuit of
excellence. As for our vinification techniques,
they belong to a tradition we have inherited
from earlier generations. Not out of nostalgia
for the past, but simply out of respect for
methods that have proved their worth."
In one Chablis plot of old vines which in 2005 produced
our first "R" cuvée we have gone even further and deliberately
limited yields to 38 hl/ha.
Wine making at the Domaine de la Tour takes
place under the eye of an oenologist whose
advice is backed by solid experience in several
prestigious wine-growing areas of Champagne
and Burgundy.
